The name Bisi Bele Bath literally translates to Hot-Lentil Rice — true to its name, this wholesome meal is traditionally made by simmering rice, lentils, veggies, and Indian spices together and is often served with generous helpings of ghee, fried potato chips or a cooling Raita on the side.

Like Dosas and Idlies, Bisi Bele Bath is enjoyed across South India and is a Karnataka classic. This recipe is my take on the all-in-one rich-in-flavor dish. I’ve substituted rice with quinoa and I love how it turned out — the nutty-grainy texture of quinoa blends so deliciously…
